my favorite diet recipe of spanish frittata is the best way to start the morning :nod:

INGREDIENTS
2 tsp. canola oil
1/4 cup chopped onion
1/4 cup chopped green pepper
1/4 cup sliced celery
1 can diced tomatoes, drained
2 eggs
1/4 cup KRAFT 100% Grated Parmesan Cheese

DIRECTIONS
Heat 1 tsp. of the oil in large nonstick skillet on medium-high heat. Add onion, peppers and celery; cook 5 minutes or until vegetables are crisp-tender, stirring occasionally. Stir in tomatoes. Cook until heated through, stirring occasionally. Remove from skillet; cover to keep warm.
Heat remaining 1 tsp. oil in same skillet on low heat. Add eggs ; cover. Cook 12 to 15 minutes or until center is set. Slide onto serving plate.
Top with the tomato mixture; sprinkle with Parmesan cheese.
