Bout time i chucked another recipe in here:D

Chicken Pepperonata

Ingredients

8 skinless chicken thighs ( any portions of chicken will do really)
2 tbsp of wholemeal flour
2 tbsp of olive oil
1 small onion
1 garlic clove crushed
1 each of large red, yellow and green pepper deseeded and thinly sliced
400g/14oz can of chopped tomatoes
1 tbsp chopped oregano and extra to garnish
salt and pepper

Method

Toss the chicken in the flour and shake of excess. Heat the oil in a wide frying pan and fry the chicken quickly until sealed and lightly browned, then remove from pan.
Add the onion to the pan and gently fry until soft, and then add garlic, peppers, tomatoes and oregano, and bring to the boil while stirring.
put the chicken back in over the top of the vegetables and season well with the salt and pepper, then cover the pan and simmer for 20-25 minutes, or until the chicken is completely cooked and tender.
Taste to see if more seasdoning is needed, then garnish with a bit oregano and serve up with some nice crusty wholemeal bread:D

you could have a bit rice with it too if you like, or maybe a jacket potato:D

That sounds really good, Saffy...I'm going to print that one out. Sometimes I get bored with doing chicken the same old way, you know? I'll be trying this one for sure.
