Another Soup

    I just made this soup and its yummy:D i think i added a bit too much chilli though so good job i like spicy:lol:

    1 small red onion chopped
    1 clove of garlic
    1 teaspoon of chilli flakes
    1 teaspoon sugar
    1 sweet potato chopped
    2 carrots sliced
    1 litre of chicken stock
    200 mls of coconut milk
    handful of coriander leaves
    salt and pepper

    cook the red onion, garlic and chilli flakes in the olive oil for a few mins,, add the sweet poatato and carrots, sprinkle over a teaspoon of sugar, season with the salt and black papper, and cook a few more mins to soften, then cover with the chicken stock and simmer for about 20 mins until veg is soft,,, then blend, and finally add the coconut milk and serve with the coriander leaves on top:D

    had to come back and edit as forgot to list sugar in the ingredients..also.. we ate this today fro lunch and it was scrummy!:D
